Rockit™Apple & Sweet Potato Stacks

Rockit Apples are the perfect choice for this festive appetizer or vegetarian side dish. Their naturally small size makes them ideal for elegant, uniform stacks that look impressive on any holiday table. This recipe is incredibly simple to assemble, yet it delivers a beautiful, refined presentation with layers of sweet potato, warm apples, creamy gorgonzola, bright cranberry sauce, and a touch of fresh rosemary.

Ingredients:

• 3 Rockit Apples, sliced about 1/4 inch thick
• 2 sweet potatoes, peeled and cut into 1-inch thick rounds (choose potatoes similar in diameter to the Rockit Apples)
• Neutral oil for coating the sheet pan (unlined) and the tops of the sweet potatoes • Salt and pepper, to taste
• Crumbled gorgonzola cheese
• Cranberry sauce (store-bought or homemade)
• Fresh rosemary sprigs

Instructions:

1. Preheat your oven to 425°F (220°C).
2. Lightly coat an unlined sheet pan with neutral oil.
3. Arrange the sweet potato rounds on the pan and brush the tops with oil. Season with salt and pepper.
4. Bake for 20 minutes, then flip the rounds. Continue baking for another 15–20 minutes, until tender.
5. Place a Rockit Apple slice on top of each sweet potato round.

6. Add a generous sprinkle of crumbled gorgonzola over each stack.

  1. Switch the oven to broil and return the pan to the oven just until the cheese becomes  melted and bubbly. 
  2. Remove from the oven and top each stack with a small dollop of cranberry sauce.

 

9. Finish with a sprig of fresh rosemary before serving.

Rockit™ Apples are the perfect addition to a boat galley. Small in size, but big on crisp, sweet flavor, these apples can show up in both sweet and savory dishes or for the perfect snack. Safe in their protective 3lb tub, they are easy and convenient to store on the counter and will last a week at room temperature – or pop in the fridge for longer storage.

Enjoy this simple, quick recipe that was created for Ranger Tug and the Roche Harbour Factory Rendezvous.

Ingredients:

  • 1 Rockit™ Apples
  • 1 Can protein (chicken or tuna)
  • 1 T chopped celery
  • 1 t chopped onion
  • 1 T mayo
  • 1/4 t dijon

 

Instructions:

  1. Core and dice Rockit™ apples.
  2. Toss with canned tuna or chicken – or leftover salmon from previous night’s dinner! – with celery, onion, mayo, and a dash of Dijon.
  3. Scoop into little butter lettuce cups or pita halves.
  4. Bonus: add walnuts or pecans if you’ve got them onboard.

  • Rockit™ apples
  • granola
  • butter
  • lemon
  • cinnamon
  • sugar

Instructions:

  1. Dice Rockit™ apples, toss with a squeeze of lemon, sugar, and cinnamon.
  2. Top with granola + a little butter.
  3. Bake in foil packets (on a small oven, grill, or even a covered skillet).
  4. Serve warm — no pie dish needed.

Ingredients:

  • 1-2 Rockit™  apples
  • 1 egg
  • 3 tbsp flour 
  • 1 tbsp sugar
  • 2-3 tbsp milk 
  • ½ tsp cinnamon 
  • spray oil 

 

Instructions:

  1. Slice your Rockit apples thinly using a knife/mandoline 
  2. Mix your egg, flour, sugar, milk and cinnamon together 
  3. Spray a mini skill with spray oil 
  4. Place your apple slices on the bottom of a mini skillet
  5. Pour the batter on top
  6. Bake @350F for around 20 minutes
  7. Top with a scoop of whipped cream and enjoy!

You can enjoy this kiwi smoothie the traditional way in a glass with a straw—or you can turn it into a smoothie bowl and top it with granola, fresh fruit, nut butter, or seeds. Just add less liquid to make it nice and thick, pour in a bowl, and add what you like!

We like to make smoothies higher in protein by adding flavored protein powder and Greek yogurt. Not only does this make your green smoothie a little healthier, but it decreases the chance for crashing later in the day!

Ingredients:

  • Spinach: Spinach is so easy to sneak into smoothies for some extra veggies. Don’t worry—you won’t even taste it!
  • Rockit™ Apples 
  • Kiwi: Sliced & diced is best. Easier to blend!
  • Vanilla Protein Powder
  • Yogurt: Helps create a creamy texture and add extra protein! I used Two Good Vanilla Yogurt.

Instructions:

  1. Add frozen spinach to your blender with cold filtered water. Blend for 20-30 seconds until smooth. It will look like green juice!
  2. Add the Rockit™ apples and frozen kiwi.
  3. Add protein powder, almond milk, and yogurt to the blender. IMPORTANT: You want to layer the protein powder between other ingredients. If it is directly against the blade, it may acquire a burnt taste after blending. Then, blend on high for 30-45 seconds or until smooth.
  4. Pour in your glass or bowl, top with your favorite toppings and enjoy!

INGREDIENTS

  • 1 Dozen Oysters, medium sized Fresh and alive 
  • 4 ounce Butter unsalted- room temperature
  • 2 Each Rockit Apple, grated
  • 1/2 Each Scallion, minced
  • 3 Each Garlic cloves, minced
  • 1 Tsp Thyme- fresh and chopped
  • 1 Tbsp Chervil- fresh and chopped
  • ¼ Tsp Black pepper
  • 1 each lemon zest

 

 

PREPARATION

  1. Preheat grill to High, ripping hot
  2. In Large bowl, Mix together apple, butter, herbs, lemon zest, garlic, and pepper. Until everything is incorporated.
  3. On a piece of plastic wrap, place butter in a long line. Roll into a log and refrigerate.
  4. Shuck oysters and place on bed of salt until ready
  5. Once grill is hot and butter is cold. Cut butter log into 12 coins. Place a coin on each oyster
  6. Grill till bubbling hot and shell is slightly charred and butter has melted
  7. Serve

PLATING

Place oysters in center of platter. Use salt for stabilization garnish with hot sauce and lemon wedges.

Instead of putting out the jalapeños poppers this year for the Super Bowl, try these little Rockit™ apple poppers! Its a great way to lighten up an old favorite and enjoy a serving a fruit as well. To make the poppers more kid friendly, try swapping out cheddar cheese and ham for the spicy pepper cheese and bacon. Go team Rockit™!

YIELD: 6-8 servings

INGREDIENTS 

  • 8-10 Rockit™ apples
  • 6 ounces spicy pepper cheese, cut into cubes
  • 6 strips of bacon, cooked
  • Toothpicks

METHOD 

  1. Cut the bacon into pieces about the size of the apple quarters.
  2. Cut each Rockit™ apple into quarters, remove the core and set on a serving plate.
  3. Place a piece of bacon and a cube of cheese on an apple quarter, skewer with a toothpick to hold together. Repeat with the remaining apple quarters. 
  4. Serve immediately.
