This Rockit™ apple quinoa, kale, apricot and chicken salad is a delight of textures and fresh flavours. Easily adaptable using whatever vegetables or herbs you have on hand, it’s a rocking salad great for lunch or dinner.

Ingredients

Salad

  • 3 Rockit™ apples
  • 1 bunch kale, washed and de-stemmed1 cup quinoa, rinsed
  • 2 cups vegetable stock
  • 1 ½ teaspoons ground cumin
  • Juice of 1 lemon
  • 8 dried apricots, cut into small chunks
  • ½ cup pumpkin seeds
  • Handful fresh mints leaves, roughly chopped
  • 1 cooked chicken breast, cut into chunks

Dressing

  • Juice of 1 lemon
  • 1.5 oz good quality olive oil
  • 1 small clover garlic, diced
  • 1 teaspoon honey or pure maple syrup
  • Sea salt and cracked black pepper to taste

Method

  1. Place all the dressing ingredients into a small jar. Season and then shake well.
  2. Chop the kale into small pieces. Place it into a bowl along with the dressing. Toss until the leaves are well coated. Leave to soften for 30 – 60 minutes. Turn regularly.
  3. Place the quinoa in a medium pot along with the vegetable stock. Bring to a boil. Reduce to a simmer and cook for 15 minutes, with the lid just slightly ajar, until the liquid has been absorbed and the quinoa is tender. Remove from the heat. Place the lid on tightly for 5 minutes. Fluff with a fork, stir through the ground cumin and leave to cool completely.
  4. Cut the Rockit™ apples into chunks, discarding the cores. Squeeze the lemon juice over the top to prevent browning.
  5. Add the kale, apricots, apple, pumpkin seeds, mint and chicken to the quinoa. Mix well. Taste and season as desired.
  6. Serve at room temperature. Leftovers will last up to 3 days in an airtight container in the fridge.
  7. Enjoy!

You can enjoy this kiwi smoothie the traditional way in a glass with a straw—or you can turn it into a smoothie bowl and top it with granola, fresh fruit, nut butter, or seeds. Just add less liquid to make it nice and thick, pour in a bowl, and add what you like!

We like to make smoothies higher in protein by adding flavored protein powder and Greek yogurt. Not only does this make your green smoothie a little healthier, but it decreases the chance for crashing later in the day!

Ingredients:

  • Spinach: Spinach is so easy to sneak into smoothies for some extra veggies. Don’t worry—you won’t even taste it!
  • Rockit™ Apples 
  • Kiwi: Sliced & diced is best. Easier to blend!
  • Vanilla Protein Powder
  • Yogurt: Helps create a creamy texture and add extra protein! I used Two Good Vanilla Yogurt.

Instructions:

  1. Add frozen spinach to your blender with cold filtered water. Blend for 20-30 seconds until smooth. It will look like green juice!
  2. Add the Rockit™ apples and frozen kiwi.
  3. Add protein powder, almond milk, and yogurt to the blender. IMPORTANT: You want to layer the protein powder between other ingredients. If it is directly against the blade, it may acquire a burnt taste after blending. Then, blend on high for 30-45 seconds or until smooth.
  4. Pour in your glass or bowl, top with your favorite toppings and enjoy!

Yield: 3 days’ worth

Ingredients

  • 1 cup peanut or almond butter
  • ½ cup unsweetened coconut shreds
  • ½ cup chopped dates or raisins
  • 1 tbsp hulled hemp seeds
  • 1 tbsp chia seeds 
  • 1 tbsp cacao nibs
  • 1 tbsp pumpkin seeds
  • 1 tsp vanilla extract
  • ½ tsp cinnamon 
  • Rockit™ Apples sliced or roughly chopped

Method

  1. Add all the above ingredients to a bowl except for the apple.
  2. Divide the mixture into three parts and using your hands, roll into three balls. Store in the refrigerator in an airtight container.
  3. Eat with your Rockit™ apples by putting the nut mixture onto a slice, or take a bite of each, or if you are near a kitchen, dice up your Rockit™ apple and add the pieces to the mixture. (Apples do not keep well in oil, so you should do this day of.)
