Curried Lentil Salad with Rockit™ Apples, Cranberries & Goat Cheese

Rockit Apples’ naturally miniature size makes them perfect for recipes where you want the fresh crunch and sweetness of apple without committing to a full-sized fruit. Whether you prefer a more apple-forward salad or just a subtle touch of sweetness, Rockit Apples make it easy to customize the flavor by adding one or two more apples as desired. Their crisp texture pairs beautifully with earthy lentils, tart cranberries, creamy goat cheese, and warm curry spices, creating a colorful salad that is ideal for potlucks, dinner parties, and seasonal gatherings.

Ingredients:

  • 2 cups dry green or French lentils
  • 6 cups water
  • 3–4 Rockit™ Apples, diced
  • 1 cup dried cranberries
  • ½ cup finely diced red onion
  • 1 cup chopped celery
  • ¾ cup toasted pecans or walnuts (optional)
  • 5 oz goat cheese, crumbled or dolloped
  • ½ cup chopped fresh parsley
  • ¼ cup chopped fresh mint

Dressing: Curried Honey Vinaigrette

  • ⅓ cup olive oil
  • ¼ cup apple cider vinegar
  • 2 tablespoons honey
  • 2 teaspoons curry powder
  • 1 teaspoon Dijon mustard
  • ½ teaspoon ground cumin
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • Juice of ½ lemon

Instructions:

  1. Rinse the lentils and place them in a pot with the water. Bring to a boil, then reduce to a simmer and cook for approximately 15 minutes, until tender but still holding their shape. Drain and allow to cool on a sheet pan.
  2. In a small bowl or jar, whisk together the olive oil, apple cider vinegar, honey, curry powder, Dijon mustard, cumin, salt, and pepper.
  3. In a large serving bowl, combine the cooled lentils, diced Rockit™ Apples, cranberries, red onion, celery, pecans or walnuts, parsley, mint, and crumbled goat cheese.
  4. Pour the dressing over the salad and squeeze the juice of half a lemon over the top. Gently toss until everything is evenly combined.
  5. Serve immediately or refrigerate for several hours to allow the flavors to meld.

 

Serving Tip:

For a more apple-forward salad, add 1–2 extra Rockit Apples. This salad holds well in the fridge for up to 3 days, making it a great make-ahead dish for entertaining.

These crisp little apples bring a sweet, juicy flavor with just the right balance of tartness, adding freshness and texture to every bite of the cake pops while also doubling as a beautiful decorative element throughout the bouquet. Whether tucked between colorful cake pops or displayed proudly on skewers, Rockit apples turn this treat into a vibrant centerpiece that feels both whimsical and thoughtful.

 

  • 1 plain store-bought vanilla cake OR 1 single-layer homemade vanilla cake
  • 1 cup vanilla frosting (store-bought or homemade)
  • 1–2 Rockit apples, diced
  • Pink or white melting wafers
  • Sprinkles in Mom’s favorite colors
  • Short skewers or cake pop sticks for cake pops
  • Long skewers for the Rockit apples
  • 1 small vibrant bouquet arrangement or bouquet wrap for assembling

 
Instructions:

  1. Bake the homemade cake according to your favorite vanilla cake recipe, or use a plain store-bought vanilla cake. Allow the cake to cool completely.
  2. Crumble the cooled cake into a large mixing bowl until fine crumbs form.
  3. Fold in the vanilla frosting and diced Rockit apples. Mix until the mixture holds together when pressed.
  4. Roll the mixture into evenly sized cake balls and place onto a parchment-lined tray. Chill for 30 minutes.
  5. Prepare the melting wafers according to the package directions using a microwave, water bath method, or wafer melter.
  6. Dip the tip of each cake pop stick into the melted wafers before inserting into the cake balls. This helps secure the stick and prevents the cake pops from falling apart while dipping.
  7. Dip each cake pop into the melted coating and gently tap away excess coating.
  8. Decorate immediately with sprinkles before the coating sets.
  9. Insert long skewers into the bottoms of the apples.
  10. Arrange the cake pops and skewered Rockit apples together into a small bouquet arrangement or wrap them bouquet-style for gifting.
  11. Serve immediately or refrigerate until ready to enjoy.

 
Serving Tip:

Tie the bouquet with ribbon or tuck in a card for an extra festive Mother’s Day presentation. The combination of colorful cake pops and fresh Rockit apples creates a sweet gift that looks just as beautiful as it tastes.

recipe:

Caramelized apples 

  • 4 Rockit miniature apples
  • 1-2 tbsp maple syrup
  • ½ tbsp oil 
  • dash of cinnamon 

 

Cheesecake base 

  • 1 cup Greek yogurt 
  • 1 tsp vanilla extract
  • 1 tsp vanilla instant pudding mix
  • 1 tbsp maple syrup 
  • dash of cinnamon

*biscuits/graham crackers for the top

 

Instructions:

  1. slice the Rockit miniature apples into small pieces
  2. pour the chopped apples, maple syrup, oil and cinnamon together into a pan
  3. cook covered  on medium heat, stir every few minutes until caramelized (6-8 minutes) 
  4. mix the ingredients for the cheesecake base 
  5. in a bowl, place a layer of the cheesecake batter, a layer of the caramelized apples, another layer of cheesecake batter and then top with the biscuits/graham crackers and a layer of caramelized apples
  6. place in the fridge for 4 hours and enjoy!

Rockit™ Apple Jam

A simple, buttery apple jam that pairs perfectly with Rock™ Cream Scones.

Ingredients

  • 6 RockIT Apples, peeled and finely diced
  • 1 cup sugar
  • 5 tablespoons cold unsalted butter

Method

  1. Place a saucepan over medium heat and add the butter.
  2. Once the butter has melted, add the diced Rockit™ Apples. Cook for about 4 minutes, stirring occasionally, until softened and lightly golden.
  3. Add the sugar and stir to coat the apples. Reduce heat to low.
  4. Continue stirring gently until the sugar fully dissolves and the mixture becomes glossy and jam-like.
  5. Remove from heat and let cool slightly before serving.

Rockit Apple Brûlée Bites are the perfect small-format appetizer for gatherings, thanks to the naturally petite size of Rockit apples. Their crisp texture and balanced sweetness create an ideal base for a creamy whipped brie filling, a touch of crispy prosciutto, and a caramelized brûlée topping. This showstopping bite-sized dish comes together quickly using only a handful of ingredients, making it an effortless yet impressive option for entertaining.

Ingredients

– 6 Rockit Apples, halved and cored with a melon baller

– 1 triangle of brie cheese (rind removed or left on, optional)

– 1/8 cup honey

– Crispy prosciutto or bacon

– 1 tablespoon butter

– Caster sugar

– Special tools: brûlée torch, piping bag

 

Directions

Halve the Rockit apples and remove the core using a melon baller to create a well.

Melt one tablespoon of butter in a large pan over medium heat.

Place the Rockit apples flesh side down and allow them to brown and caramelize.

While the apples caramelize, crisp the prosciutto in a separate pan. Drain any excess fat and set aside.

Remove the apples from the pan, place them flesh side up on a serving tray, and allow them to cool.

In a food processor, whip together the brie and honey until smooth. Transfer the mixture into a piping bag (no tip necessary).

Once the apples are cool, place a pinch of crispy prosciutto into each cavity.

Pipe the whipped brie mixture into the well, filling each apple half.

Press the filled top of each apple gently into caster sugar and return to the serving tray.

Using a brûlée torch, torch the sugar until caramelized and firm.

Rockit Apples are the perfect choice for this festive appetizer or vegetarian side dish. Their naturally small size makes them ideal for elegant, uniform stacks that look impressive on any holiday table. This recipe is incredibly simple to assemble, yet it delivers a beautiful, refined presentation with layers of sweet potato, warm apples, creamy gorgonzola, bright cranberry sauce, and a touch of fresh rosemary.

Ingredients:

• 3 Rockit Apples, sliced about 1/4 inch thick
• 2 sweet potatoes, peeled and cut into 1-inch thick rounds (choose potatoes similar in diameter to the Rockit Apples)
• Neutral oil for coating the sheet pan (unlined) and the tops of the sweet potatoes • Salt and pepper, to taste
• Crumbled gorgonzola cheese
• Cranberry sauce (store-bought or homemade)
• Fresh rosemary sprigs

Instructions:

1. Preheat your oven to 425°F (220°C).
2. Lightly coat an unlined sheet pan with neutral oil.
3. Arrange the sweet potato rounds on the pan and brush the tops with oil. Season with salt and pepper.
4. Bake for 20 minutes, then flip the rounds. Continue baking for another 15–20 minutes, until tender.
5. Place a Rockit Apple slice on top of each sweet potato round.

6. Add a generous sprinkle of crumbled gorgonzola over each stack.

  1. Switch the oven to broil and return the pan to the oven just until the cheese becomes  melted and bubbly. 
  2. Remove from the oven and top each stack with a small dollop of cranberry sauce.

 

9. Finish with a sprig of fresh rosemary before serving.

Ingredients

  • 3 Rockit™ apples
  • 1 red chili
  • 3/4 cup corn kernels
  • 1/2 large capsicum, diced
  • 1/2 red onion, diced
  • Large handful of fresh coriander, roughly chopped
  • Generous pinch of salt
  • Juice of 1 lime
  • 1 tablespoon olive oil

Method

  1. Place all ingredients into a bowl and mix well. Taste and adjust seasoning as needed,

  • 9 Rockit™ Apples (Visit rockit.fruitlocator.com to find Rockit Apples in a store near you)
  • (2) puff pastry doughs (I found mine in the freezer section at my local grocery store)
  • 1-2 tablespoons all purpose flour
  • 1 (8oz) softened cream cheese
  • 1/2 cup cane sugar
  • 1 tsp vanilla extract
  • 1 tsp lemon juice
  • 1/4 cup egg white wash
  • 1 tablespoon powdered sugar (for garnish)

Recipe instructions: 

  1. Preheat the oven to 400 degrees F.
  2. Let’s make mini Rockit™ Apples & Cheese danishes together. Start with 2 puff pastry doughs at room temperature. (I found them in the freezer section at my local grocery store). Lightly flour a surface and spread the pastry dough flat.
  3. Use a pizza cutter or knife to slice the puff pastry into 18 equal squares (if you’re using 2 sheets of puff pastry, it will be 9 small squares)
  4. In a mixing bowl, beat together cream cheese, sugar, lemon juice, and vanilla extract. Fill into a piping bag or use a spoon to scoop cheese batter onto pastry squares.
  5. Cut Rockit™ Apples into fine slices and layer onto cheese + pastry combo.
  6. Fold the puff pastries into squares and brush them with egg wash. Sprinkle them with cane sugar.
  7. Bake for 15 minutes or until the danish is lightly toasted.
  8. Serve and enjoy!

INGREDIENTS 

  • 8-10 Rockit™ apples
  • 6 ounces spicy pepper cheese, cut into cubes
  • 6 strips of bacon, cooked
  • Toothpicks

METHOD 

  1. Cut the bacon into pieces about the size of the apple quarters.
  2. Cut each Rockit™ apple into quarters, remove the core and set on a serving plate.
  3. Place a piece of bacon and a cube of cheese on an apple quarter, skewer with a toothpick to hold together. Repeat with the remaining apple quarters. 
  4. Serve immediately.

Elevate your party game with our mini Rockit™ apples and a mini wheel of brie. Cheese and apples are a party staple but arranging them in a pinwheel makes an elegant presentation that is easy to eat as well!

INGREDIENTS 

  • 1 (4.4 oz.) wheel of brie cheese
  • 3-4 Rockit™ apples

METHOD

  1. Slice the wheel of brie into 16 wedges, maintaining the round shape of the wheel.
  2. Cut the top quarter of a Rockit™ apple off and set aside for the garnish. Slice the remaining apple crosswise into rounds, then cut the rounds in half. (No need to worry about the core because the Rockit™ apples are such a small core that they are unnoticeable when eating; just remove any seeds.) Slice the remaining apples as needed.
  3. Insert the apple halves in-between the cheese wedges; when done place the apple top in the center as a garnish. Serve immediately.
