Apple pie for one, please! This little single-serve dessert is everything — warm, flavorful, and ready in just minutes with delicious Rockit™ Apples.

  • 2 rice paper wraps
  • 1 egg
  • ¼ cup milk
  • 1 Rockit miniature apple
  • 1 tbsp butter/coconut oil
  • 1 tbsp brown sugar/coconut sugar
  • ¼ tsp cinnamon

Method

  1. Make your caramelized apple mixture – peel and chop the Rockit miniature apple
  2. Place in a pot along with butter, sugar and cinnamon
  3. Let it cook on medium heat until bubbly and caramelized (about 5 minutes) stir every so often
  4. On a large plate, mix the egg and milk together
  5. Place the rice paper for a few seconds until it softens
  6. Do this again and place the second sheet on top of the first
  7. Pour the caramel apple mixture into the center
  8. Fold up like a burrito and air fry @350F for 8-10 minutes, flipping halfway & enjoy!

Rockit™ Apple Jam

A simple, buttery apple jam that pairs perfectly with Rock™ Cream Scones.

Ingredients

  • 6 RockIT Apples, peeled and finely diced
  • 1 cup sugar
  • 5 tablespoons cold unsalted butter

Method

  1. Place a saucepan over medium heat and add the butter.
  2. Once the butter has melted, add the diced Rockit™ Apples. Cook for about 4 minutes, stirring occasionally, until softened and lightly golden.
  3. Add the sugar and stir to coat the apples. Reduce heat to low.
  4. Continue stirring gently until the sugar fully dissolves and the mixture becomes glossy and jam-like.
  5. Remove from heat and let cool slightly before serving.

Oven Temp: 425°F (218°C)

Ingredients

  • 2 cups (280 g) all-purpose flour (low-protein preferred)
  • 1 tablespoon (15 g) baking powder
  • 3 tablespoons (40 g) sugar
  • ½ teaspoon (3 g) fine salt
  • 5 tablespoons (70 g) cold unsalted butter, diced small
  • 6 RockIT Apples, Peeled, finely chopped (about ½ cup packed)
  • 1 cup (235 ml) heavy cream

Method

  1. Preheat oven to 425°F (218°C) with rack in the center.
  2. In a large bowl, mix flour, baking powder, sugar, and salt until combined.
  3. Cut cold butter into the dry ingredients until crumbly with small butter pieces remaining. Fold in chopped RockIT Apples.
  4. Add heavy cream and gently mix until the dough just comes together.
  5. Turn dough onto a clean surface and knead briefly (5–10 seconds) until soft.
  6. Shape dough into an 8-inch round and cut into 8 wedges, or cut rounds with a biscuit cutter.
  7. Bake on an ungreased baking sheet for 12–15 minutes, until lightly golden.
  8. Cool on a wire rack for 10 minutes before serving.

These cinnamon apple protein muffins are cozy and with just the right amount of sweetness. Make them for an easy and delicious protein addition to breakfast, lunches, or snacks. They’re naturally nut free and can easily be made gluten-free, dairy-free, and/or 100% plant-based, as needed.

Ingredients
¼ cup melted butter
½ cup unsweetened applesauce
½ cup 2% or full-fat plain or vanilla Greek yogurt
1 large egg
1 teaspoon pure vanilla extract
1½ cups quick cooking oats
½ cup all-purpose flour
½ cup cane sugar
⅔ cup Puori PW1 vanilla whey protein powder (60 g)*
1 ½ teaspoons ground cinnamon
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon fine salt
1 cup diced Rockit™  apple, cut to about ½-inch pieces

 

Instructions
Preheat the oven to 350°F. Mist a standard muffin pan with cooking spray or line with muffin liners and mist those, or use a silicone muffin pan.
In a mixing bowl, combine the melted butter, applesauce, yogurt, egg, and vanilla.
Add the oats, flour, sugar, protein powder, cinnamon, baking powder, baking soda, and salt. Mix until combined, then gently fold in the diced apples.
Divide the batter among the prepared muffin cups. Bake for 20-22 minutes.
Remove from the oven and let the muffins cool in the pan for 5 minutes before removing to a wire rack to cool completely.
Store in an airtight container at room temperature for up to 4 days, in the fridge for up to 7 days, or freeze for up to 3 months.

These cinnamon-sugar apple sticks are the perfect crunchy-sweet treat, made with bite-size Rockit™ miniature apples and paired with a dreamy churro-style yogurt dip. So easy, so snackable—you’re gonna want to make extra.

Ingredients:

  • 5 Rockit™ miniature apples
  • ½ tsp cinnamon
  • 2 tbsp coconut sugar
  • 1 tbsp coconut oil (melted)

For the churro dipping sauce:

  • ½ cup yogurt (plain or vanilla)
  • Dash of cinnamon
  • ½ tbsp coconut sugar

Instructions:

  1. Slice the Rockit™ miniature apples into sticks.
  2. In a bowl, mix the melted coconut oil with the cinnamon and coconut sugar.
  3. Toss the apple sticks in the mixture until evenly coated.
  4. Lay the coated apple sticks in a single layer on a lined baking sheet or air fryer tray.
  5. Air fry at 415°F for about 15 minutes, or until golden and slightly crisp.
  6. While the apples cook, mix the yogurt with a dash of cinnamon and ½ tbsp coconut sugar for your churro-style dipping sauce.
  7. Serve the warm apple sticks with the chilled yogurt dip—and enjoy!

Base

  • 1 cup oats
  • 1 cup milk
  • optional: 1 tbsp maple syrup
  •  ¼ cup yogurt

Caramelized Apple

  • 3 Rockit apples
  • 3 tbsp coconut sugar
  • 1 tbsp maple syrup
  • Dash of cinnamon

Method

  1. Mix the oats and milk together 
  2. Prepare the caramelized apples by chopping up 3 Rockit Apples
  3. Then mix in the coconut sugar, maple syrup and cinnamon 
  4. Heat up a pan and pour your apple mixture 
  5. Stir over a medium flame until all caramelized (around 3 minutes) 
  6. Layer your overnight oats by placing one layer of oats, then a layer of the caramelized apples, a layer of yogurt, another layer of oats and then top it off with the rest of the caramelized apples 
  7. Let it sit in the fridge overnight and enjoy!

Homemade granola is the perfect partner to delicious and nutritious Rockit™ apples. This is an incredible way to start you day and to kick start your healthy morning routine.

Ingredients

  • 3 cups whole oats
  • Zest of 1 orange
  • 1 cup nuts and seeds – we used pistachios, cashews and pumpkin seeds. Use whatever is on hand.
  • 1 cup toasted coconut flakes
  • 1/2 cup dried fruit – we used apricots and cranberries
  • 1/4 cup coconut oil
  • 1/4 cup honey
  • 1 tsp vanilla extract

Method

  1. Preheat oven to 300 degrees Fahrenheit.
  2. Toss the oats and orange zest together with the nuts and seeds.
  3. Heat the wet ingredients (coconut oil, honey & vanilla extract) gently until melted together. Pour this over the oats and toss well.
  4. Spread out evenly on a lined baking tray. Bake for 35 minutes, tossing once during this time.
  5. Remove from the oven and mix through the dried fruit and toasted coconut. Allow to cool completely before storing in an airtight container for up to 2 months.
  6. To serve: Spoon granola into a bowl and add a dollop of Greek yogurt. Top with apple slices, a drizzle of honey and any other favourite fruit.

Ingredients:

  • 12 sliced of thick brioche bread
  • 6 Rockit™ Apples, peeled, cored, and halved
  • 7 eggs
  • ½ milk of choice
  • ½ tsp. vanilla extract
  • Dash of almond extract
  • Dash of cinnamon powder
  • Dash of cardamom powder
  • Pinch of salt

Directions:

  1. Preheat your oven to 375° F. Make an impression in each piece of bread with a Rockit™ apple and cut out a small apple sized circle using the impression as your guide. Alternatively, you can use a small apple sized biscuit cutter. Set aside.
  2. Peel, core and halve the Rockit™ apples. Using the hasselback technique, slice each halved apple, keeping the slices together and not cutting all the way through. Set aside.
  3. In a bowl, add the remaining ingredients, whisk to incorporate. Dip each slice of bread in the egg mixture and place on a lined and buttered baking sheet.  When all the bread has been dipped, slip the halved and sliced apples into the center pocket of each brioche slice.
  4. Using a basting brush, brush each apple top with any remaining egg mixture.
  5. Cook in your preheated oven for 11 minutes on the middle rack.  After the time has elapsed, bring the temp up to broil and continue to cook for 2 additional minutes or until the brioche toasts are golden brown. 
  6. Serve with honey, powdered sugar, maple syrup or just enjoy as is!

  • (2) puff pastry doughs (I found mine in the freezer section at my local grocery store)
  • 1-2 tablespoons all purpose flour
  • 1 (8oz) softened cream cheese
  • 1/2 cup cane sugar
  • 1 tsp vanilla extract
  • 1 tsp lemon juice
  • 1/4 cup egg white wash
  • 1 tablespoon powdered sugar (for garnish)

Recipe instructions: 

  1. Preheat the oven to 400 degrees F.
  2. Let’s make mini Rockit™ Apples & Cheese danishes together. Start with 2 puff pastry doughs at room temperature. (I found them in the freezer section at my local grocery store). Lightly flour a surface and spread the pastry dough flat.
  3. Use a pizza cutter or knife to slice the puff pastry into 18 equal squares (if you’re using 2 sheets of puff pastry, it will be 9 small squares)
  4. In a mixing bowl, beat together cream cheese, sugar, lemon juice, and vanilla extract. Fill into a piping bag or use a spoon to scoop cheese batter onto pastry squares.
  5. Cut Rockit™ Apples into fine slices and layer onto cheese + pastry combo.
  6. Fold the puff pastries into squares and brush them with egg wash. Sprinkle them with cane sugar.
  7. Bake for 15 minutes or until the danish is lightly toasted.
  8. Serve and enjoy!

INGREDIENTS

  • 3 Eggs, Whole 
  • ¾ cup Milk 
  • ¾ cup All Purpose Flour 
  • ¼ Tsp. Kosher Salt 
  • 1 Tsp. Ground cinnamon 
  • 4 Tbsp. Unsalted Butter (divided- 2 Tbsp each) 
  • 3 Rockit™ Apples, De-cored, medium sliced 
  • To Taste Maple syrup 
  • To Taste Powdered Sugar

PREPARATION  

  1. Preheat Oven to 425 Fahrenheit  
  2. In a blender, blend eggs, milk, flour, salt, cinnamon. Set Aside.
  3. In cast iron pan on medium heat melt 2 Tbsp Butter add Apple sauté 2 mins. Remove and set aside for garnish. 
  4. Add additional 2 tbsp butter to pan and melt on medium heat.
  5. Once butter is bubbling, add batter and place in preheated oven. Bake for 15 minutes until puffy, golden and center is set but still custardy.
    (Don’t be alarmed it will deflate slightly when removed from oven.)

PLATING  

  1. Slice in the pan, garnish with cooked apples in the center.
  2. Finish with a generous sprinkle of powdered sugar. Serve with maple syrup. YUM!
