Rockit™ Apple Scones
Tender, lightly sweet cream scones filled with fresh Rockit™ Apple pieces.
Yield: 8 scones
Oven Temp: 425°F (218°C)

Ingredients
- 2 cups (280 g) all-purpose flour (low-protein preferred)
- 1 tablespoon (15 g) baking powder
- 3 tablespoons (40 g) sugar
- ½ teaspoon (3 g) fine salt
- 5 tablespoons (70 g) cold unsalted butter, diced small
- 6 RockIT Apples, Peeled, finely chopped (about ½ cup packed)
- 1 cup (235 ml) heavy cream
Method
- Preheat oven to 425°F (218°C) with rack in the center.
- In a large bowl, mix flour, baking powder, sugar, and salt until combined.
- Cut cold butter into the dry ingredients until crumbly with small butter pieces remaining. Fold in chopped RockIT Apples.
- Add heavy cream and gently mix until the dough just comes together.
- Turn dough onto a clean surface and knead briefly (5–10 seconds) until soft.
- Shape dough into an 8-inch round and cut into 8 wedges, or cut rounds with a biscuit cutter.
- Bake on an ungreased baking sheet for 12–15 minutes, until lightly golden.
- Cool on a wire rack for 10 minutes before serving.
