Recipe for Chocolate-Dipped Rockit Apple Rounds:

  • 4 Rockit apples, sliced into ¼-inch rounds
  • 1 cup chocolate chips or chopped chocolate
  • 3 tbsp pistachio crème
  • 1 tsp sea salt flakes
  • 2 tbsp pistachios, roughly chopped

 
Instructions:

  1. Slice Rockit apples into ¼-inch rounds. Pat dry with a paper towel so the chocolate adheres well.
  2. Melt chocolate in a heatproof bowl over a double boiler or in the microwave in 30-second intervals, stirring until smooth.
  3. Dip each apple round into the melted chocolate, letting any excess drip off. Place on a parchment-lined baking sheet.
  4. While the chocolate is still wet, drizzle pistachio crème over each round, then sprinkle with sea salt flakes and chopped pistachios.
  5. Let the chocolate set at room temperature or refrigerate for 10 minutes before serving.

Recipe for the apples:

  • 1 tbsp cinnamon 
  • ~1/3 cup brown sugar per apple half

 

Recipe For the Meringue::

  • 1/4 cup water
  • 1/3 cup granulated sugar
  • 1 tbsp meringue powder
  • Instructions:

    1. Preheat oven to 400°F.
    2. Prepare the apples by peeling, halving, and coring them. Slice each half thinly, being careful not to cut all the way through (Hasselback style).
    3. Arrange apples in a baking dish. Brush generously with melted butter mixed with cinnamon.
    4. Sprinkle each apple half with approximately 1/3 cup of brown sugar. 
    5. Cover with foil and bake for 25 minutes, until tender and syrupy. 
    6. . Remove from oven and allow to cool slightly (warm, not cold).
    7. . While apples bake, prepare the meringue: whisk together water, sugar, and meringue powder until thick, glossy, and holding soft peaks.
    8. .To serve, place two apple halves on a plate and spoon some of the pan syrup over the top.
    9. . Serve immediately and enjoy warm.

Instructions:

  1. Slice the Rockit miniature apples into thin slices using a mandolin/sharp knife

  3. Pour in the yogurt, melted peanut butter, peanuts and chocolate chips
  4. Place a cover over the bowl and mix well until each piece is coated 
  5. Top with more melted peanut butter, peanuts and chocolate chips 
  6. Enjoy!

These cinnamon apple protein muffins are cozy and with just the right amount of sweetness. Make them for an easy and delicious protein addition to breakfast, lunches, or snacks. They’re naturally nut free and can easily be made gluten-free, dairy-free, and/or 100% plant-based, as needed.

Ingredients
¼ cup melted butter
½ cup unsweetened applesauce
½ cup 2% or full-fat plain or vanilla Greek yogurt
1 large egg
1 teaspoon pure vanilla extract
1½ cups quick cooking oats
½ cup all-purpose flour
½ cup cane sugar
⅔ cup Puori PW1 vanilla whey protein powder (60 g)*
1 ½ teaspoons ground cinnamon
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon fine salt
1 cup diced Rockit™  apple, cut to about ½-inch pieces

 

Instructions
Preheat the oven to 350°F. Mist a standard muffin pan with cooking spray or line with muffin liners and mist those, or use a silicone muffin pan.
In a mixing bowl, combine the melted butter, applesauce, yogurt, egg, and vanilla.
Add the oats, flour, sugar, protein powder, cinnamon, baking powder, baking soda, and salt. Mix until combined, then gently fold in the diced apples.
Divide the batter among the prepared muffin cups. Bake for 20-22 minutes.
Remove from the oven and let the muffins cool in the pan for 5 minutes before removing to a wire rack to cool completely.
Store in an airtight container at room temperature for up to 4 days, in the fridge for up to 7 days, or freeze for up to 3 months.

Rockit Apples are the perfect choice for this festive appetizer or vegetarian side dish. Their naturally small size makes them ideal for elegant, uniform stacks that look impressive on any holiday table. This recipe is incredibly simple to assemble, yet it delivers a beautiful, refined presentation with layers of sweet potato, warm apples, creamy gorgonzola, bright cranberry sauce, and a touch of fresh rosemary.

Ingredients:

• 3 Rockit Apples, sliced about 1/4 inch thick
• 2 sweet potatoes, peeled and cut into 1-inch thick rounds (choose potatoes similar in diameter to the Rockit Apples)
• Neutral oil for coating the sheet pan (unlined) and the tops of the sweet potatoes • Salt and pepper, to taste
• Crumbled gorgonzola cheese
• Cranberry sauce (store-bought or homemade)
• Fresh rosemary sprigs

Instructions:

1. Preheat your oven to 425°F (220°C).
2. Lightly coat an unlined sheet pan with neutral oil.
3. Arrange the sweet potato rounds on the pan and brush the tops with oil. Season with salt and pepper.
4. Bake for 20 minutes, then flip the rounds. Continue baking for another 15–20 minutes, until tender.
5. Place a Rockit Apple slice on top of each sweet potato round.

6. Add a generous sprinkle of crumbled gorgonzola over each stack.

  1. Switch the oven to broil and return the pan to the oven just until the cheese becomes  melted and bubbly. 
  2. Remove from the oven and top each stack with a small dollop of cranberry sauce.

 

9. Finish with a sprig of fresh rosemary before serving.

Safe in their protective 3lb tub, they are easy and convenient to store on the counter and will last a week at room temperature – or pop in the fridge for longer storage.

Ingredients:

  • 1 Rockit™ Apples
  • 1 Can protein (chicken or tuna)
  • 1 T chopped celery
  • 1 t chopped onion
  • 1 T mayo
  • 1/4 t dijon

 

Instructions:

  1. Core and dice Rockit™ apples.
  2. Toss with canned tuna or chicken – or leftover salmon from previous night’s dinner! – with celery, onion, mayo, and a dash of Dijon.
  3. Scoop into little butter lettuce cups or pita halves.
  4. Bonus: add walnuts or pecans if you’ve got them onboard.

These Rockit™ apple rice paper rolls are fresh, healthy and tasty. Filled with crunchy tofu, apples and a variety of colorful vegetables served alongside a delightful satay sauce – it’s the perfect light lunch.

Ingredients

  • 2 Rockit™ apples, core removed and sliced thinly
  • 15 oz firm tofu
  • Cornflour for coating tofu
  • Sea salt and cracked black pepper to taste
  • 1 packet round rice paper wrapper
  • 3-4 leaves of lettuce
  • 2 cups vermicelli noodles cooked
  • 1 large carrot, cut into thin matchsticks
  • 4 in piece cucumber, cut into thin matchsticks
  • 1 red capsicum, cut into thin matchsticks
  • 1 avocado, sliced
  • Oil for flying

Satay sauce

  • 1/2 cup smooth peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon sugar
  • 2 tablespoons coconut cream
  • Hot water as needed to adjust thickness of sauce

Method

  1. Whisk together all the satay sauce ingredients and thin with hot water until you have a consistency that is suitable for dipping.
  2. Cut the block of tofu into 1 cm thick slices and then half these so you have long strips. Dust generously with cornflour that has been well seasoned with sea salt and black pepper.
  3. Heat a generous glug of oil in a pan over a medium heat. Cook the tofu until golden on each side.
  4. Assemble all your fresh ingredients and the noodles in their separate piles on a board to make it easy to assemble.
  5. Soak a rice paper wrapper in a shallow bowl of warm water for 10-15 seconds. Place on a damp surface.
  6. Start with a small piece of lettuce. Top with some noodles. Follow with a few pieces of carrot, cucumber and capsicum. Top this with avocado.
  7. Just beside this (closer to the canter), place some apple, mint slices and a piece of tofu.
  8. Fold the edge of the rice paper roll closest to you over the first pile and then tuck in the edges as you roll over the tofu and apple. Roll all the way to the other edge ensuring the sides are tucked in and the roll is sealed at the end.
  9. Enjoy!

This Rockit™ apple, shredded chicken, radish and mint & parsley pesto salad is a glorious addition to your lunch repertoire. Whether you’re hosting a Mother’s Day lunch or searching for a salad to fuel you throughout your work day – this recipe is for you. Recipe was developed by @kellygibney

Ingredients

Dressing

  • 1/3 cup good quality olive oil
  • Juice of 1 lemon
  • 1 garlic clove, finely diced
  • Large handful fresh mint leaves
  • Large handful fresh parsley leaves
  • Sea salt and cracked black pepper

Salad

  • 3 Rockit™ apples, sliced thinly
  • 100g rocket leaves or greens of your choice
  • 1.5 cups shredded roast chicken
  • 1/4 cup lightly toasted pistachios, roughly chopped
  • Additional fresh herbs for garnishing

Method

  1. Place all dressing ingredients in a bowl and use a stick blender to blitz all ingredients until smooth. Taste and season generously.
  2. Use a knife to slice the Rockit™ apples into matchsticks, alternatively use a julienne cutter.
  3. Divide the salad leaves between 2 places. Scatter the radish slices amongst the leave. Top with the apples slices and drizzle half the dressing.
  4. Add the chicken and pistachios and drizzle more dressing as desired.
  5. Garnish with additional herbs as you please.

INGREDIENTS 

  • Broccoli – Instead of lettuce, we are using crunchy, fresh broccoli in this Waldorf Salad.
  • Sharp Cheddar Cheese – Sharp cheddar has the perfect salty and tangy bite that nicely contrasts the sweet apples in this salad.
  • Onion – Use red for a little bit more bitterness.
  • Rockit™ Apples – Rockit™ apples have just the right amount of tartness and just the right amount of sweetness. They’re so juicy too.
  • Greek Yogurt – Yogurt will be the base of our Waldorf Salad dressing. This lightens up a what could be a heavy, cream-based dressing and adds a bit of protein too.
  • Light Mayo – To thicken up the yogurt dressing a bit.
  • Salt & Parsley – Added to the dressing for a balance of flavors.

DIRECTIONS

  • First, we will chop our produce: If your broccoli isn’t already cut into florets, chop into bite size pieces. If you buy a pre-cut bag of broccoli, cut any larger pieces. The smaller the better with this salad! Finely dice the red onion. Dice Rockit™ apples.
  • Then, add produce to a large mixing bowl along with cheddar cheese.
  • For the dressing, in a smaller bowl combine greek yogurt, light mayo, salt, and parsley. Mix until combined.
  • Add dressing to the large bowl and toss well until all broccoli florets are covered.
  • Enjoy!

  • 1/4 cup red onion
  • 1/4 cup brussels sprouts
  • 1/4 cup dried cranberries
  • 1/4 cup candied pecans
  • 1/2 avocado
  • 1/2 feta cheese
  • 1/4 cup dressing
  • Tip: add dressing before serving. If packing for meal prep, store dressing in a separate container and pour over salad prior to serving 🙂

Instructions:

  1. This salad comes together in less than 5 minutes and is super simple to substitute ingredients out if need be.
  2. Start by preparing the rice (I recommend using a microwavable pouch and making it according to the instructions)
  3. Finely dice red onion, chop dried cranberries, and Rockit™ Apples.
  4. Let’s build the salad. Layer in the spinach and cooked rice.
  5. Add the red onion, apples, cranberries, feta cheese, pecans, and avocado to the salad.
  6. If consumed immediately, toss the salad with dressing. **but if meal prepping it, please keep the dressing on the side for optimal freshness & pour it on prior to consuming.
