These cinnamon-sugar apple sticks are the perfect crunchy-sweet treat, made with bite-size Rockit™ miniature apples and paired with a dreamy churro-style yogurt dip. So easy, so snackable—you’re gonna want to make extra.

Ingredients:

  • 5 Rockit™ miniature apples
  • ½ tsp cinnamon
  • 2 tbsp coconut sugar
  • 1 tbsp coconut oil (melted)

For the churro dipping sauce:

  • ½ cup yogurt (plain or vanilla)
  • Dash of cinnamon
  • ½ tbsp coconut sugar

Instructions:

  1. Slice the Rockit™ miniature apples into sticks.
  2. In a bowl, mix the melted coconut oil with the cinnamon and coconut sugar.
  3. Toss the apple sticks in the mixture until evenly coated.
  4. Lay the coated apple sticks in a single layer on a lined baking sheet or air fryer tray.
  5. Air fry at 415°F for about 15 minutes, or until golden and slightly crisp.
  6. While the apples cook, mix the yogurt with a dash of cinnamon and ½ tbsp coconut sugar for your churro-style dipping sauce.
  7. Serve the warm apple sticks with the chilled yogurt dip—and enjoy!

Ingredients:

  • 4-5 Rockit Snack Sized Apples
  • 3 tbsp coconut sugar
  • 1 tsp cinnamon 
  • 1 tbsp oil 

 

Instructions:

  1. Slice the Rockit apples thinly – with a knife or mandolin 
  2. Mix the sliced apples with the oil
  3. Mix in the coconut sugar and cinnamon until each piece is covered  
  4. Lay out the slices on a piece of parchment paper and air fry @350f for 15-20 minutes until crispy 
  5. Let it cool and enjoy!

Instructions:

  1. Slice a ROCKIT™ apple (or your favorite apple) into rounds.
  2. Spread 1-2 teaspoons of almond butter on each slice.
  3. Sprinkle a few toffee chips over the almond butter.
  4. Place three mini marshmallows on top.
  5. Broil on low until the marshmallows are golden and gooey (watch closely to avoid burning).
  6. Enjoy warm!

Homemade granola is the perfect partner to delicious and nutritious Rockit™ apples. This is an incredible way to start you day and to kick start your healthy morning routine.

Ingredients

  • 3 cups whole oats
  • Zest of 1 orange
  • 1 cup nuts and seeds – we used pistachios, cashews and pumpkin seeds. Use whatever is on hand.
  • 1 cup toasted coconut flakes
  • 1/2 cup dried fruit – we used apricots and cranberries
  • 1/4 cup coconut oil
  • 1/4 cup honey
  • 1 tsp vanilla extract

Method

  1. Preheat oven to 300 degrees Fahrenheit.
  2. Toss the oats and orange zest together with the nuts and seeds.
  3. Heat the wet ingredients (coconut oil, honey & vanilla extract) gently until melted together. Pour this over the oats and toss well.
  4. Spread out evenly on a lined baking tray. Bake for 35 minutes, tossing once during this time.
  5. Remove from the oven and mix through the dried fruit and toasted coconut. Allow to cool completely before storing in an airtight container for up to 2 months.
  6. To serve: Spoon granola into a bowl and add a dollop of Greek yogurt. Top with apple slices, a drizzle of honey and any other favourite fruit.

Tools:

  • Paring Knife
  • Apple Corer

Directions:

  1. Core four Rockit™ Apples with a paring knife or an apple corer.
  2. Cut the string cheese and the jerky stick in half.
  3. Insert each halved piece into the center of the Rockit™ Apple and add to your lunch routine!


The cheese and/ or jerky sticks also keeps the apple from browning. These make a great addition to a charcuterie board or party appetizer!

Ingredients

  • 4 cups of quartered, cored, and rough chopped Rockit™ apples
  • ½ cup water 
  • 1 Tbsp lemon juice
  • 2 tsp cinnamon

Method

  1. Peel, core and chop your apples.
  2. Add the apples to the water in a large pot over medium-low heat. Bring to a simmer and cover, allowing to cook on low heat for 15 minutes or so.
  3. Dump the cooked mixture to a blender, add the lemon juice and puree till smooth.
  4. Put the pureed mix back into the pot and cook for an additional 10 minutes stirring regularly so that it doesn’t stick to the bottom of the pot.
  5. Line a baking sheet with a silicone mat or microwave safe plastic wrap. Pour the puree onto the lined baking sheet.
  6. Preheat the oven to the lowest possible temperature (170°F is standard) and cook for 8-10 hours or overnight. Or, if you have a dehydrator, pour the puree onto the solid ring or silicone liner, and cook at 135°F overnight.
  7. Allow the fruit leather to completely cool.  Remove, cut into three large strips (or smaller if you would like) and roll up with parchment paper.

Apple season is not just for the Fall my friends! I enjoy apples all year round. I have recently discovered a new kind of apple that I wanted to share with you all. It is called the Rockit™ Apple! It is the cutest little mini apple you ever did see. Basically, the PERFECT pocket-size fruit. Truly, I have been walking around with 1 – 2 of these in my bag. I love the flavor profile of them – they are sweet, crunchy and delicious. They are great for kids to eat on the go because they can actually hold them in their little hands. They are very crisp too- I could slice one up with some cheese and a glass of Sav Blanc at a summer picnic and be super happy. Honestly, I am dreaming of a day like that right now.

Rockit™ Apples are also great to use in recipes! They are the perfect baking apple because of their flavor profile, which makes them a great addition to granola. Aka why I decided to make this Healthy Apple Pie Granola with them! The taste of the baked apples with the crunchy oats, nuts, and honey is absolutely amazing! This recipe is super easy and will be enjoyed by everyone. I love granola as a snack, on top of yogurt and even on top of some vanilla ice cream (channeling summer vibes over here).

Let’s get into it! Here is what you need:

  • Rockit™ Apples – Cutest little sweet and delish apples ever!
  • Rolled Oats – Gluten Free or Whole Grain work perfect
  • Fresh Pecans – Almonds also work great
  • Coconut Chips – I love it when these get toasted!
  • Honey – For Sweetness, of course ?
  • Cinnamon & Apple Pie Spice – If you do not have Apple Pie Spice, you can double the cinnamon or use allspice. Either work!
  • Coconut Oil Spray – Regular nonstick is ok too.

PREP TIME 10 mins
COOK TIME 20 mins
TOTAL TIME 30 mins

INGREDIENTS

  •  2 Rockit Apples
  •  2 cups Rolled Oats
  •  2 tbsp Chopped Pecans
  •  2 tbsp Toasted Coconut Chips
  •  2 tbsp Honey
  •  1 tsp Cinnamon
  •  1 tsp Apple Pie Spice (if you do not have, do 2 tsp of cinnamon)
  •  Coconut Oil Spray

METHOD

  1. Set oven to 325
  2. Chop 2 Rockit Apples into small pieces (1/4 inch). Add to a large mixing bowl.
  3. Toss in oats, nuts, coconut chips, spices, and honey! Toss and mix well with a spatula. Make sure the honey coats as much as possible.
  4. Line a cookie sheet with parchment paper and spray with coconut oil.
  5. Evenly spread out the mixture on the cookie sheet. Press down throughout with your hands or the back of a spoon/ spatula to make sure it is even. Sprinkle more cinnamon on top.
  6. Generously spray coconut oil on top so everything is well coated.
  7. Bake for 20-25 minutes.
  8. Store in a mason jar at room temperature for one week.

Baked apple chips are a wholesome, healthy snack that please kids and adults alike. Easily packed in a lunchbox or munched on during movie night, apple chips are convenient and tasty. Our oil-free chips are baked to perfection, making them good for you without compromising on deliciousness. And they’re easy to make. What’s not to love?

We used Rockit™ apples to make perfectly portioned little chips sprinkled with a cocoa spice mix and a little cayenne pepper for a surprise hint of heat. This can of course be omitted if you or your loved ones prefer your sweets without any spicy.

Yield: 3-4 servings

INGREDIENTS

  • 4 Rockit™ apples
  • 1 tablespoon granulated sugar
  • 1 tablespoon cocoa powder
  • 1 1/2 teaspoons ground cinnamon
  • 1 pinch of cayenne pepper (optional)

METHOD

  1. Preheat the oven to 225°F / 110°C.
  2. Line 2 sheet pans with parchment paper and set aside.
  3. Mix the sugar, cocoa, cinnamon and cayenne pepper (if using) together in a small bowl.
  4. Slice the apples crosswise into very thin slices. This is best done with a mandolin or vegetable slicer if you have one. No need to core the apples, just remove any seeds before baking.
  5. On a clean work surface, lay the apple slices flat. Dust one side with the spice mixture and transfer to the lined sheet pans. The slices can be close together but should not overlap.
  6. Bake in the oven for 1 hour, rotating pans from top to bottom after 30 minutes to ensure even baking. Apples should be fairly crisp but, if they’re still soft, bake for an addition 15-30 minutes until they crisp up.
  7. Remove pans from the oven and carefully flip the apple slices over.
  8. Turn of the oven off before placing the pans back inside. Allow chips to continue drying out in the cooling oven for an hour or overnight if you can.
  9. Store cool apple chips in an airtight container for up to a week.

NOTES

* We used a traditional Aztec spice mix (cocoa, cinnamon and cayenne) to make it interesting but cayenne can be omitted to remove heat.
* This recipe is very easy to double or triple, so make baked apple chips for a crowd!

INGREDIENTS

9 soft street-taco shells (see note below)
2 tablespoons raw sugar 
1 1/2 teaspoon cinnamon, divided 
5 Rockit™ apples, skin left on and diced
2 tablespoon raw honey 
1 tablespoon lemon juice 
2 teaspoons cornstarch 
1/4 cup water, plus more
coconut whipped cream

METHOD

1. Preheat oven to 375º.  On a plate, sprinkle raw sugar and cinnamon. Gently mix the two together. Spray both sides of the soft taco shells with nonstick cooking spray, then lightly dip both sides in the cinnamon mixture. 
2. Flip a muffin tin over. Place each cinnamon-coated soft taco shell between each of the muffin tins, so that the muffin-tin humps help the taco shell stay in place and formed. Place in the the oven and bake for 10 minutes.  Remove and let cool completely. 
3. To make apple filling, combine chopped apples, honey, lemon juice, and 1 teaspoon cinnamon in a small saucepan. Stir cornstarch into the 1/4 cup water and add to the saucepan. Heat on medium for about 10 minutes until apples are completely softened, and gooey-thick. You may need to add more water – about another 1/4 cup, as apples cook, to create a sauce-like mixture. 
4. Spoon the apple filling into each of the taco shells. Top with coconut whipped cream and a sprinkle cinnamon, or a little granola.  Enjoy immediately!

NOTE

A tortilla that’s about 3-4 inches across works great. If you need to, you can take a larger wheat tortilla, and cookie-cut it using a 3-4 inch small bowl.
