Pumpkin-Pecan Pie Dip
Sweet, crunchy, little in size and big on flavor, the tiny Rockit® Apple is the perfect pairing for Pumpkin Pecan Pie Dip. It’s all the flavors of fall pie, in a easy and high-protein delicious dip that tastes like a scoopful of fall.
Makes: about 4 cups
Dip Ingredients
- 1 1/2 cup pumpkin puree
- 1 cup cottage cheese
- 2 teaspoons vanilla extract
- 1/3 – 1/2 cup pure maple syrup or honey (or sweetener of your choice)
- 1 tablespoon pumpkin pie spice
- 1 scoop vanilla protein powder, optional
- 1 cup whipped topping (any kind will do), plus more
Topping Ingredients
- 1/4 cup chopped pecans
- 1 tablespoon pure maple syrup
- 1/2 teaspoon cinnamon
Method
- Add pumpkin, cottage cheese, vanilla, sweetener, pumpkin pie spice, and protein powder (if using), to a food processor or heavy-duty blender. Blend until dip is creamy, scraping down the sides as needed and blending again.
- Pour dip into a bowl, and fold in whipped topping.
- On a small baking sheet, scatter pecans. Toast on low-broil (constantly watching!) just until pecans are lightly browned. Remove and immediately drizzle maple syrup over pecans. Sprinkle cinnamon on them stir together on the baking sheet.
- Pour Pumpkin Dip into a serving bowl, and spoon toasted maple pecans on top. Top with a dollop of whipped cream. Serve with sliced Rockit® Apples! Enjoy a scoopful of fall!
