Rockit™ Apple Figgy Brie Bites
Naturally, mini Rockit™ Apples are the perfect little vessels for these sweet and savory appetizers. Baked until tender while still holding their shape, each apple holds a fluffy filling of whipped brie, mascarpone, fig jam, and smoky bacon, finished with a crisp, caramelized sugar top. Their petite size makes them easy to pick up and enjoy, creating an edible appetizer cup that’s perfect for holiday gatherings, dinner parties, or any occasion that calls for a special little bite.
Makes 12 appetizers
Oven temperature: 350°F
Bake time: 18 minutes
Recipe:
12 Rockit™ Apples
8 oz brie, rind left on or removed
8 oz mascarpone
1/2 cup fig jam
A splash of cream
1 cup cooked bacon bits or chopped pecans
1/4 cup caster sugar
Instructions:
- Preheat the oven to 350°F. Set out a 12-count mini muffin tin.
- Slice the top off each Rockit™ Apple. Use a melon baller to scoop out the core and create a well, keeping the bottom of the apple intact. Place each apple in a mini muffin cup to keep it sturdy and prevent it from rolling during transport to and from the oven.
- Bake for 18 minutes, until the apples are tender enough to bite into but still hold their shape. They should be soft, not mushy.

- Meanwhile, combine the brie, mascarpone, fig jam, cream and bacon bits or chopped pecans in an electric mixer. Whip until incorporated and fluffy. Transfer to a piping bag with an opening large enough for the bacon or pecans.

- Let the baked apples cool on the counter. Once cooled, pipe the brie mixture into the well of each apple.

- Pour the caster sugar into a small dish. Gently press the filled top of each apple into the sugar, then return it to the mini muffin tin.
- Use a brûlée torch to caramelize the sugar until golden and crisp. Serve immediately.
